These are a pretty good substitute for a chicken breast, but be careful not to overcook. I find they get rubbery if you cook too long. I made a pretty good vegan chicken parmesan by pan frying them in a little oil and melting some Daiya provolone cheese on top. I wanted to try breading and frying, but haven't yet. The only criticism I have is each piece is pretty large and a lot to eat at one sitting.
