Really, really good vegan bacon. I like my bacon crispy and not greasy (rather dry) and this works as a great substitute for the real thing. My favorite way to prepare it is to spray a liberal amount of oil (cooking spray) on a foil-lined baking tray, cut the bacon into fourths to make smaller pieces and lay it out not touching. Then spray again on top. Bake in the convection oven at 375 for 15 minutes. It comes out all crispy crunchy goodness! I like to pair it with the vegan sunny side up egg, Daiya cheese and sourdough English muffins to make vegan bacon egg "McMuffins". A real treat!
